It’s a truth universally acknowledged that people in the Rheingau region love to drink wine – preferably a fine Riesling produced by one of the many local winemakers. However, a fine glass of wine is even more enjoyable if it’s accompanied by a delicious meal or an exquisite snack. The perfect side dish is the region’s famous “Spundekäs”, a kind of cream cheese dip which is very tasty and really brings out the flavor in any wine. The best part is that you can easily prepare Spundekäs at home – today, we’ll show you how it’s done!

As with most traditional dishes, there are many different recipes and preparation methods for Spundekäs as well. They are often based on old family recipes that have evolved throughout the years. Today, we’ll show you a rather traditional way of preparing Spundekäs. Feel free to refine our recipe to taste.

Our recipe for a typical Rheingau Spundekäs

We‘ll need the following ingredients to prepare an authentic Rheingau Spundekäs:

  • ½ an onionRezept-Spundekaes
  • 1 clove of garlic (if you love garlic and don’t plan to go on a date the next day, feel free to use 2-3 cloves)
  • 150 g of cream cheese
  • 125 g of curd cheese (“quark”)
  • 100 g of crème fraîche or sour cream
  • Salt, pepper and sweet paprika powder to taste
  • Fresh chives


Zubereitung-SpundekaesCut the onion into small cubes or thin rings. Mix the cream cheese and curd cheese (quark) with either crème fraiche or sour cream until you have a uniform mass. Add the crushed garlic clove(s) as well as salt and pepper to taste. The sweet paprika powder adds the typical reddish color and a zesty flavor to the Spundekäs. At last, add onion rings or cubes and mix well. Put the mixture in the fridge for several hours to let the flavor of the ingredients unfold.

Spundekäs-RezeptSpundekäs is served with pretzels, crackers or fresh bread and garnished with freshly chopped chives, onion rings, radish or fresh slices of paprika. However, it’s best served with a glass of fine Rheingau wine. ;-)
